Simple al fresco Italian Sausage Skillet Recipe

At our house, we have had one of the craziest weeks on record. The holiday season has been hitting us full-force with holiday parties, school concerts, and a general feeling of “how am I going to get all of this done?!” And of course, there is still work, school, and all of the general daily activities that must be finished, like cleaning the house and making dinner. To say I am overwhelmed is an understatement.

We have partnered with al fresco Chicken Sausage to come up with a simple, easy meal that can help simplify those busy holiday evenings, allowing you to have a healthier meal at home rather than grabbing fast food on the run. I came up with a simple skillet meal featuring al fresco Fully Cooked Sweet Italian Style sausage and put it to the test on a busy night.

As I made this quick, easy recipe, I was talking to my dad on speaker phone, answering last-minute work meals, and getting two kids ready for school events – plus I managed to take the pictures for this post! My family loved the flavor and didn’t even realize that they were eating a little healthier with al fresco Chicken Sausage over our usual pork! (But the real bonus? The middle schooler managed to eat his without getting any on his white dress shirt for band. Your experience may vary.)

Ingredients:

  • 20171214_1515581 package al fresco Fully Cooked Sweet Italian Style Sausage, sliced
  • 2 green peppers, chopped
  • 1 sweet onion, chopped
  • 2 cloves garlic, minced
  • 2 cans diced tomatoes (I used basil, garlic, and oregano flavored, but you can use plain and season to taste)
  • ½ cup shredded parmesan cheese
  • 3 cups penne pasta, cooked al dente
  • Olive oil
  • Salt & pepper

Instructions:

  1. alfresco processCoat a deep skillet with olive oil. Sauté peppers and onions until peppers begin to soften and onions are translucent.
  2. Add garlic and sauté about one more minute.
  3. Add sliced chicken sausage to pan and cook until warmed through, stirring periodically.
  4. Next, add in the diced tomatoes and simmer for 5-7 minutes.
  5. Stir in the parmesan cheese until melted.
  6. Add the cooked pasta and continue simmering for another 2-3 minutes so that the flavors will all come together.
  7. Serve and enjoy!
