Festive Fridays: St. Patrick’s Day Fun & Rainbow Cake

St. Patrick’s Day is the one day of the year that everyone gets to celebrate being Irish, no matter their ancestry. While for some this means drinking copious amounts of green beer and Irish whiskey, there is lots of fun and mischief to be had as a family, as well.

My kids think it’s a ton of fun to set a leprechaun trap the night before St. Patrick’s Day. Sometime during the night, a leprechaun trips the trap and drops a few gold chocolate coins or a pile of gold glitter, but we never can seem to catch those tricky little things!

While they’re running around the house, the leprechauns pull a prank or two, like turning the milk green or leaving a pool of green water in the bathroom sink. I’ve heard that some people have swapped out their cereal for Lucky Charms!

Of course, we cap off the day with a meal of corned beef, cabbage, and potatoes, as any good half-Irish mama would serve on such an important day.  If you want a special dessert to complete your meal, a variation of the adorable rainbow layer cake that Amy made for her daughter’s birthday would be perfect! I would finish it with green icing and top with some gold chocolate coins for decoration. Get the recipe here.


TIP: Be sure to cool the layers completely and make sure that they are leveled evenly before stacking to keep the layers from sliding when frosted.
