With school back in session, afternoons and evenings are a total blur around here. The kids have practices, tryouts, and meetings, along with the ever-present stacks of homework. Finding quick and easy dinner options that don’t come from a drive-thru window is an absolute must.
For years, we have had Gorton’s fish sticks and filets in our regular meal rotation, but have lately been searching for fun ideas to up the game as the kids’ tastes are becoming more sophisticated. I recently was challenged by Gorton’s to come up with a delicious, easy back to school meal idea so played off one of the kids’ current obsessions – tacos.
These Popcorn Shrimp Tacos feature Gorton’s Classic Popcorn Shrimp on a delicious tangy slaw, plus a spicy ranch drizzle to kick the flavor up a notch. Quick, easy, and on the table in no time! Plus, they were given the 11-year-old boy seal of approval. Can’t beat that!
1 box Gorton’s Classic Popcorn Shrimp
3 cups shredded slaw veggies (I used a combo of pre-shredded cole slaw mix and red cabbage)
1/8 cup lime juice
1/8 cup white wine vinegar
1 clove garlic, crushed
½ tsp salt
½ tsp pepper
¼ cup extra virgin olive oil
½ cup sour cream
1 tablespoon spicy ranch dip mix from packet
10 flour or corn tortillas
Combine lime juice, vinegar, garlic, salt, and pepper in medium bowl. Whisk in olive oil, pouring in a slow stream to help emulsify. Dress slaw and set aside to marinate while you prepare the rest of the ingredients.
In a small bowl, combine sour cream and dip mix until well blended. Use a small splash of milk to help thin out to drizzle on to tacos more easily.
Bake popcorn shrimp at 425 degrees for 14-16 minutes. Assemble slaw and 5-6 popcorn shrimp on tortillas and drizzle with spicy ranch. Optionally, you can add shredded or crumbled cheese or chopped cilantro to suit your family’s tastes.
