Festive Fridays: Mother’s Day Brunch Ideas

Mother’s Day Brunch is a staple for many families. While some head out for a fancy and delicious meal, others simply have a low-key breakfast at home, served in bed by their adoring family. (This is my pipe dream and I am horrendously jealous of those of you who get that.)

Whether you’re in charge of your own meals on Mother’s Day or if you’ve got your own personal chefs whipping up something delicious, here are a few of my favorite easy recipes and ideas that will make quick work of your brunch.  Plus, most are simple enough that the kids can help out and feel like they made you breakfast!

Overnight Casseroles – I love overnight casseroles for special breakfasts on days when I don’t want to deal with a lot of prep in the morning. Have the kids help you assemble the night before, then just pop them in the oven in the morning. Two of my personal favorites are Overnight Caramel French Toast and Hash Brown and Egg Casserole.

Slow Cooker Breakfasts – Let your slow cooker do the work while you sleep and try this easy Overnight Apple Oatmeal. You’ll wake up to a breakfast all ready to serve and a house that smells amazing.

Fruit, cereal, and waffles – Depending on the age of your kids, they may want to try their hand at “cooking” for you. Toaster waffles, fresh fruit, muffins, cereal, and similar items are easy for them to prepare for a fun Mother’s Day surprise.

Microwave meals – If the kids aren’t quite stove-ready, but can handle the microwave, let them make you a breakfast of microwaved pancakes and sausage or bacon. While it might not be the gourmet meal you’d get at a restaurant, the kids will be so very proud of themselves that they were able to do something special for mom.
